    intensity of light for cultivation during the maturation of oyster cap mycelium can be limited to 50 of the brightness required for the creation of the anlagen and the growth of the fruit bodies The moment to change conditions in the growing cellar and to proceed to the next phase of cultivation comes when visibly thickened white ring of mycelium appears around the openings in the foil and when anlagen of oyster cap fruit bodies are visible in the openings The appropriate parameters humidity temperature in the growing hall can be maintained with the aid of an air conditioning central combined with a recuperator recovering heat and humidity from the exhaust air Stage II oyster cap growth of anlagen and creation of fruit bodies During this stage of cultivation air temperature should be gradually reduced to 12 14 C the maximum permissible temperature during the summer is 16 18 C the minimum temperature during the winter is 10 12 C and the humidity increased to 80 90 During the growth of the anlagen the intensity of ventilation and fresh air access need to be increased and the CO2 concentration gradually decreased to 800 and then to 600 ppm It needs to be remembered however that the air flow speed cannot exceed 10 cm second ideally it should be 6 7 cm second when cigarette smoke is dispersed gently but firmly This and the next third stage require full light for the cultivation i e minimum 200 300 lux for 10 12 hours a day Stage III oyster cap maturation of fruit bodies and harvest In order to achieve good quality of oyster cap fruit bodies their maturation should take place at air humidity of 82 86 and air temperature of 12 14 C In case of a large amount of anlagen and mushrooms the temperature may be decreased to 10 12 C to ensure their better quality During the maturation of fruit bodies the CO2 concentration should not exceed 800 ppm ideally it should be about 600 ppm This stage requires more intensive ventilation than the previous one in particular in case of large numbers of mushrooms However the air flow speed and humidity specified above should be maintained During the final stage of maturation of oyster cap mushrooms air humidity needs to be decreased to about 70 75 in order to achieve better mushroom quality and storage The harvest should not be extended too long it should be completed in a couple of days After the harvest the foil on oyster cap packs can be washed with a strong stream of water especially if a lot of spores settled on it Stage IV oyster cap regeneration of mycelium after the first harvest After the harvest is finished the remains of stems of the collected fruit bodies need to be eliminated During the first 2 3 days air temperature should be increased to 15 17 C and ventilation should be discontinued Air humidity during that stage should reach 80 85

    tissues are made of they turn lignin and cellulose into sugars food for the mushroom It is a complicated process since lignin and cellulose are composed of long chains of carbon and hydrogen As it turns out similar chains of elements constitute the basic structure of petroleum pesticides and other toxic chemicals Hence Stamets concluded that mushrooms will be able to decompose substances which are harmful to the environment The mushroom species which destroyed the toxic chemicals the most efficiently was oyster cap mushroom growing on tree stumps Oyster caps purify petroleum stains eliminating over 97 per cent of toxic chemical compounds polycyclic aromatic hydrocarbons and alkanes which pollute the soil Stamets reached such conclusions after a series of experiments carried out together with a group of scientists of Battelle Laboratories of Bellingham Washington On the parking lot of the university they heaped up four piles of soil polluted with petroleum and gasoline One was to be purified with bacteria cultivated for that purpose another with plant enzymes the third was left without intervention and on the fourth heap Stamets placed a live mycelium of oyster cap mushrooms Next the heaps were covered with tarpaulins The scientists uncovered them after four weeks Three were black and intensely smelled of petroleum The sight of the fourth heap overgrown with mushrooms surprised the scholars It was covered by bright yellow oyster caps of 30 centimeters in diameter The mushrooms were tested and it turned out they were not polluted they contained none of the chemical compounds comprised in petroleum The mycelium transformed hydrocarbons from petroleum to carbohydrates sugars which constitute nutrients for the mushrooms After eight weeks of the experiment the mushrooms rotted and many flies and other insects drawn by the smell of their decomposition appeared on the pile The insect laid eggs and larvae hatched which drew birds Those in turn brought seeds of various plants in their droppings Thus a pile of soil polluted with petroleum turned into an oasis of life in a matter of weeks At the end of the experiment after 12 weeks the scientists analyzed the chemical composition of the soil from the pile It was completely devoid of toxins In order to benefit from the detoxicating properties of mushrooms Stamets came up with the idea of producing filtrating bags filled with mycelia and plant remains Such bags perfectly prevent the pollution of rivers and lakes since thanks to appropriate enzymes they decompose phosphorus rich pesticides and fertilizers flowing from neighboring fields before these chemicals make their way into water reservoirs The bags can also be placed near factories in places where toxic solvents are dumped The mushrooms are so eager to purify the world that sometimes they also attack other organisms such as bacteria For instance the growing mycelium of wine cap stropharia Stropharia rugoso annulata produces numerous crystal structured particles These pyramid shaped structures attract various bacteria including the pathogenic rod shaped Escherichia coli and paralyze them Then the growing mycelium devours the
